Ingredients
- 2 eggs, beaten
- 300g plain flour
- 1 teaspoon bicarbonate of soda
- 175ml vegetable oil
- 4 tablespoons buttermilk
- 1 1/2 tablespoons brown rice syrup or agave
- 1 1/2 teaspoons vanilla extract
- 3 large bananas, mashed
- 180g sultanas
- 125g chopped walnuts
Method
Preheat the oven to 180 C / Gas mark 4. Lightly grease a large loaf tin.Beat eggs, flour, and bicarb together. Stir in oil, buttermilk, brown rice syrup, and vanilla. Fold in bananas, sultanas, and walnuts. Pour the cake mixture into the prepared tin.
Bake in the preheated oven until a skewer inserted into the center comes out clean, about 25 minutes.
